Cookies with dates

cookies with dates Lovely and crisp biscuits.
Brown sugar gives a wonderfully caramelized biscuits taste.
Egg and lactose-free recipec.


200g butter
1½ dl brown sugar
3½ dl wheat flour
2 teaspoon baking powder
125 grams dried dates
1 teaspoon vanilla

- Whisking brown sugar and butter to soft foam.
-Add to chopped dates and mix.
-Combine the dry-ingredients together and stir into the dough.
-Baked dough rod which is cut a few centimeters in lenght slices.
-Then move the pan to.
-Press with fork slices slightly flatter.
-Biscuit baked at 175 degrees for about 12 minutes.
-Cool on a wire rack and decorated.
-I used to decorate the toasted slivered almond and icing sugar mixture.
-Just as well you can decorate with melted white chocolate and dried fruits.

Balsamic onions

Light balsamic gets limpid marinated onions.
A great side dish to meat.
onions in balsamico vinegars


  • large onions
  • 1 dl water
  • 1 dl light balsamico vinegars
  • 1 dl sugar
  • pinch of salt
  • pinch of ground black pepper
  • ½ tl tinjami
  1. Peel and slice onions.
  2. Measures tht boiler all the broth ingredients.
  3. Bring to the boil for a few minutes.
  4. Add the onions in hot broth.
  5. Bring to a boil fast.
  6. Cool.
  7. And its ready.Very easy ja quickly.

Blueberry Mascarpone - layers of delicacy

In this dessert there are layers of vanilla pudding, blueberry sauce, biscuits and mascarpone-blueberrymousse. Most of all you need big and sweet bush blueberries.

This dessert is gathered into a big bowl. With this precept you can satisfy four to five gourmets.

Blueberry mascarpone

Vanilla pudding layer:

  2 dl   sugar
  3      yolks
3/4 dl   wheat flour
  2 dl   hot milk
 20 g    soft butter
  1 tbsp vanilla sugar
  1 dl   whipped cream

Whip sugar and yolks as foam.
Add wheat flour and hot milk into foam. Mix well.
Cook pudding in warm water bath as thick and smooth soup.
Move the soup to cold water bath to get it cooler.
Whip soft butter and vanilla sugar among soup.
When the soup is cooled then add whipped cream.

Blueberry mascarpone layer:

1   jar mascarpone
2   dl  cream whipped as spongy
1,5 dl  pureed blueberries and sugared according to your own taste

Now you are ready to build layers into your bowl.
Between layers and on surface add biscuits and bush blueberries by your own taste and vision.
The more blueberries the better mix of tastes you will get.

Easy old fashioned vanilla ice cream

Vanilla ice cream

3/4 cup of sugar
pinch of salt
1 3/4 cups of whole milk
2 beaten eggs
1 ½ cups of whipping cream
1 split vanilla bean.

  • Combine sugar,salt,split vanilla bean and milk in saucepan.Cook the mixture over medium heat,stirring occasionally until mixture almost boils.Reduce the heat to low.
  • Gradually stir about 1 cup of hot milk in to the beaten eggs.Add eggs to remaining hot mixture.
  • Cook over low heat,stirring until slightly thichened,about 3 minutes.Remove it from heat and chilled mixture,stirring them with a wire whisk.Remove the vanilla bean.
  • Pour the mixture into canister then freeze it in freezer.

Cherry compote

Cherry compote

This cherry compote is a nice addition to desserts, crepes and cakes. It is vanilla-scented and aromatic. When I cooked this version of compote its cherry and vanilla rich scent spreaded aĺl over kitchen. It was lovely.
My next was to make a cheesecake. How delicious it would be to spread cherry compote on it. Nam!

Simply, this compote was made of:

600g cherries without stones
300g jam sugar
1 dl cherry wine
1 pc split vanilla bean

Firstly I removed stones from cherries.I tried to keep cherries in their own shape as much I could so as to compote would seem fine.
I used narrow a tip knife. It worked well when I started to remove stones from
root side of cherries. Of course you can use stone remover if you own it.

Then I put cherries, jam sugar and cherry wine into kettle.
After that I split vanilla bean and added it into soup.
Then I brewed cherries slowly as long as cherries seemed nearly translucent.
But they were still snappy. If I remember right it took about 15 minutes.

Finally I let cherry compote to get cool. I threw the split vanilla bean into compote to give taste to it.

Black currant,caramel pie

When your mind wants to have something sweet...

This recipe has a good mix of sweet and sour. You can get 12-14 pies depending on the size of pies you decide to make. Serve your pies with ice cream or vanilla sauce.

Black currant,caramel pie


  • 200 grams butter or margarine
  • 1½ dl sugar
  • 1 egg
  • 1 dl potato flour
  • 3 dl wheat flour
  • 1 teaspoons baking powder

  1. Mess up room temperature butter and sugar together until they are whipped as foam.
  2. Combine egg and foam together.
  3. Combine dry substances together.
  4. Throw flour mixture to foam container.
  5. Move the dought into fridge to keep it cool. Cool dought is easier to bake as a thin sheet.


1½ dl black currant jam

1 cans (380 grams) condensed milk
1 tablespoon butter
1 tablespoon brown sugar

  1. Mix the ingredients in a high container. Please, check that container will fit to your microwave oven.
  2. Move the ingredients into microwave oven and let them boil about 10 minutes. Stir the caramel mixture now and then.
  3. When the caramel mixture has been thickened it is time to move it to cool place.

Use metal molds. Metal or aluminum molds are best.


  1. Coat the molds with butter.
  2. Roll the dought on a floured surface as thin sheet.
  3. Cut suitable pieces of sheet and place them into bottoms of molds.
  4. Put 1 teaspoon of black currants jam on dought in molds.
  5. Coat black currant jam in molds with 1-2 teaspoons of caramel.
  6. Roll and cut thin covers from the dought. 
  7. Put the covers on molds.
  8. Connect cover and bottom parts well to together.
  9. Make couple of small air holes in the middle of the pies.
  10. Heat the oven to 200 degrees.
  11. Bake your molds with dought in middle of the oven about 12-15 minutes.

Blackcurrant jam

Black currant jam

You need:

                   2 kg  blackcurrant berries
                1/2 kg  granulated sugar
                  25  g  gelling agent

  1. Clean the berries
  2. Boil the berries as soft (about 5 minutes)
  3. Add sugar to the boiler and mix it
  4. Let the mixture boil some minutes
  5. Mix in another container sugar and gelling agent
  6. Put mixed sugar and gelling agent into boiler
  7. When entire berry mixture starts to boil, let it happen about 1 minute
  8. Remove the boiler from hotplate
  9. If you see any foam on the surface of berryjam, peel it off
  10. Move hot jam into disinfected glass jars and close the lids
  11. Cool jars as quickly as possible
